"Authentic Mexican food" means something different depending on where the cook grew up. Ours comes from Aguascalientes, a small state in central Mexico known for hand-ground salsas, slow-cooked steak, and tamales steamed in corn husks the same way our family has made them for generations.



Three things.
Our salsa is roasted, then ground by hand — tomatillos, chiles de árbol, garlic, salt. No blender shortcuts and no bottled tomato base. That's why it tastes alive instead of acidic.
Steak is the centerpiece of regional cooking back home. We season it simply, sear it hot, and slice it thin — the same prep you'll find in carne asada plates, steak burritos, and the Carne India dinner on our menu.
Pork, masa, corn husk, steam. No shortcuts, no day-old microwaved fillers. Each tamal is wrapped by hand the morning it's served.

If you're looking for authentic Mexican food near you and the menu reads like a fast-food drive-thru, you're probably in the wrong place. Here's what to look for instead.
- Torta
- A Mexican sandwich — toasted roll, beans, cheese, your choice of meat, lettuce, tomato, onion, sour cream. Served on telera or bolillo bread, never sliced sandwich bread.
- Al Pastor
- Marinated pork, traditionally spit-roasted with pineapple. Spicy, sweet, smoky.
- Chile Relleno
- A whole poblano pepper stuffed with cheese, battered and fried. Mild heat, big flavor.
- Carne India
- An Aguascalientes-leaning plate — steak with onions, tomatoes, and pepper, served with pinto beans, cilantro, and limes.
- Cabeza / Tripas
- Slow-cooked beef cheek and crisped beef tripe. The taco-truck classics most chain spots won't touch.
- Horchata
- A cold rice-and-cinnamon drink. Sweet, creamy, and the right answer to any spicy plate.
